Easy pulled pork rice bowl

Merry Christmas, Happy New Year, Happy MLK Jr. Day and Hello February! Whew. It’s been a while.

And now that we’re done with all that, a recipe:

Easy pulled pork rice bowl

Serves 1

This is unbelievably easy. And it’s a really awesome recipe after you’ve made pulled pork (to be even more specific, Everyday Paleo’s Beyond Easy Pulled Pork). EP’s pulled pork is far and away, my FAVORITE paleo recipe. What’s even better about it is that the leftovers last a long time. Oh ya, and it’s delicious.

Whatcha need

1/2 cauliflower
1/3 cup cooked spinach (use as much or as little as you want)
6 oz (or so) Beyond Easy Pulled Pork
Frank’s Red Sauce

How ya make it

  1. Rinse off your cauliflower and rice it using a food processor or blender (I cooked mine for three minutes in the microwave, stirred and put it back in for another 2 minutes).
  2. Cook your spinach (I use frozen and microwave mine).
  3. Nuke your leftover pulled pork
  4. Throw cauliflower, spinach and pork in a bowl and mix. Add as much Frank’s Red Sauce as desired.
